What’s With All The Duck?
Have you been wondering why we serve so many duck products?
As chefs, we look at all foods in a very interesting way already – with openness to possibilities and new ways of making a fabulous meal. But when you also really keep an eye on the industries and farmers from which you’re getting your ingredients, it’s equally as important to take into account all other factors such as humane treatment, environmental impacts, sustainability, taste, health, supporting small businesses, and more.
We’ve all seen it. The pork industry has been for decades wrought with problems – whether that be cruelty, unsanitary practices, the recent deregulation in food safety, environmental impacts of industry farming, or health outbreak concerns. It all means that we, as conscious chefs, need to be doing our part in providing the best for those we serve. So, I along with my husband, began looking for something new: a cruelty free, sustainable farmer, that could provide us a vehicle to continue to serve items such as ham, sausage, BBQ, etc. We found that in Maple Leaf Farms.
Maple Leaf Farms provides farm-raised, white Pekin duck. This is not your gamey, mallard or wild duck. The meat perfectly allows us to provide nearly every item that we would serve that would otherwise be pork. We cure and smoke our duck to make ham, it’s ground to make burgers or breakfast sausage, we serve smoked hot dog and beer braised brats made of duck. And can even make an amazing pulled BBQ sandwich all with duck. And most palates don’t even realize that it’s duck rather than pork or beef. And as an added perk – it’s healthier!

We will absolutely serve pork. We are not “anti” pork. Should a client request pork on their catering or event, we will absolutely serve what they wish, but will be getting pork from one of the many local farmers with which we can confirm good practices for humane raising and handling.

Here at Good Groceries, we think about the environment and the impact we have. So we use eco-friendly serviceware, zero Styrofoam, and compost through Compost House and Atlas Organics.
